  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
Cream Cheese Filling
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Method
 

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin pan with liners.
  2. Mix dry ingredients in a large bowl; whisk wet ingredients in a separate bowl.
  3. Combine wet and dry, then prepare cream cheese filling by mixing cream cheese, powdered sugar, and vanilla.
  4. Fill muffin liners halfway with batter, add a spoonful of cream cheese filling, then top with remaining batter.
  5. Bake for 20-25 minutes until a toothpick comes out clean; cool before serving.
